Can I hear it for the quintessential spring veggie…ASPARAGUS! The time has arrived to make an asparagus salad and let me tell you…

Between the asparagus, dill and lemon, this salad screams spring. As a side or the main meal, it’s a mood booster.

Asparagus

Speaking of mood boosters, did you know asparagus is one of them? This veggie is full of folate, a b vitamin that is associated with mood enhancing properties. LIfting your spirits and helps to ward off irritability. In addition it also contains tryptophan, an amino acid that have been similarly linked to improved mood.

More commonly known, asparagus contains high levels of the amino acid asparagine, making it a natural diuretic. Eating this veggie can help flush excess fluid and salt from your body, which may help prevent urinary tract infections.

Dill

It’s dill season baby. If you know me by now…dill is my favorite herb. It adds a lightness to any meal. During this time of year you’ll catch me adding loads of dill to my avocado toast, making lemon-dill hummus and so much more. Of course I had to add it to this salad! It complements the other veggies and lemon flavor so well.

I hear you though if dill isn’t your style. Feel free to omit and replace with parsley or any other spring herb you fancy!

Asparagus & Pea Salad + Lemon Dill Dressing

The sun is out and Spring is shining bright! This is the quinnesential spring salad ready to eat in 15 minutes or less.

Total Time 15 minutes

Ingredients

For the Salad:

  • Arugula
  • Asparagus (raw; shaved)
  • Sugar Snap Peas (raw)
  • Radishes (sliced)
  • Vegan Feta (crumbled)
  • Lemon Zest

For the Lemon Dill Dressing:

  • 1/2 Cup Plant-based Yogurt
  • 1 Tbsp Dill (fresh; finely chopped)
  • 2 tsp Dijon Mustard
  • 1-2 Tbsp Lemon Juice (thin out as desired!)
  • Salt & Pepper

Instructions

For the Lemon Dill Dressing:

  • Add all ingredients to a bowl or jar and stir or shake!

For the Salad:

  • Start with your greens and work your way down the ingredients list. If you don't have time to shave the asparagus you can cut them up into small rounds!
  • Top with the dressing and enjoy 🙂
