Ingredients
For the Salad:
Arugula
Asparagus(raw; shaved)
Sugar Snap Peas(raw)
Radishes(sliced)
Vegan Feta(crumbled)
Lemon Zest
For the Lemon Dill Dressing:
1/2CupPlant-based Yogurt
1TbspDill(fresh; finely chopped)
2tspDijon Mustard
1-2TbspLemon Juice(thin out as desired!)
Salt & Pepper
Instructions
For the Lemon Dill Dressing:
Add all ingredients to a bowl or jar and stir or shake!
For the Salad:
Start with your greens and work your way down the ingredients list. If you don't have time to shave the asparagus you can cut them up into small rounds!
