Radish
Radishes are a good source of antioxidants like catechin, pyrogallol, vanillic acid, and other phenolic compounds. They also have a good amount of vitamin C, which acts as an antioxidant to protect your cells from damage.
You’ll see I used the traditional red radish that I found in my grocery store. In the springtime there are many varieties including: white, purple and yellow!
Carrot
Carrots are an excellent source of vitamin A in the form of beta carotene, which helps improve eye health. They are also a good source of many B vitamins, as well as vitamin K and potassium.

Raw Radish & Carrot Salad + Dijon Vinaigrette
Ingredients
Dijon Vinaigrette:
- 1/2 Cup EVOO
- 3 Tbsp White Wine Vinegar
- 1 Tbsp Agave (or Maple Syrup if you don't have any!)
- 1-2 Tbsp Dijon Mustard (coarse)
Raw Radish & Carrot Salad:
- Arugula
- 5-6 Radishes (I love spiralizing them! if not; julienne)
- 1-2 Carrots (I love spiralizing them! if not; julienne)
- Pumpkin Seeds
- Sunflower Seeds
- Scallions or Chives (chopped)
- Dijon Vinaigrette
