Raw Radish & Carrot Salad + Dijon Vinaigrette

Ingredients

Dijon Vinaigrette:

  • 1/2 Cup EVOO
  • 3   Tbsp White Wine Vinegar
  • 1 Tbsp Agave (or Maple Syrup if you don't have any!)
  • 1-2 Tbsp Dijon Mustard  (coarse)

Raw Radish & Carrot Salad:

  • Arugula
  • 5-6 Radishes (I love spiralizing them! if not; julienne)
  • 1-2 Carrots (I love spiralizing them! if not; julienne)
  • Pumpkin Seeds
  • Sunflower Seeds
  • Scallions or Chives (chopped)
  • Dijon Vinaigrette

Notes

If you're not a fan of Arugula - Spinach works great as well!
Added Protein - I would recommend quinoa!
