As I started to assemble this Asian Chopped Salad, it was a breeze layering on seasonal ingredient after seasonal ingredient.
Asian Chopped Salad Nutrients
Salad Greens
I used spinach AND bok choy. Spinach is my favorite, nutrient dense leafy green and combined with bok choy creates quite the texture mix. Bok choy is a cruciferous vegetable (i.e. kale, Brussels sprouts, and broccoli) and variety of Chinese white cabbage. However, it is significantly less bitter than raw kale! So a great option when mixing your greens.
Although not technically green, I also added in red cabbage for an extra crunch. Feel free to use green cabbage especially if you have half a head waiting for you in the refrigerator!
Salad Toppings
I used edamame, cashews, asian pear, carrots and scallions. HELLO beautiful variety! To highlight a few:
Edamame
Edamame beans are whole, immature soybeans. They are rich in several vitamins and minerals, especially vitamin K and folate, and protein, antioxidants, and fiber.
I buy my edamame frozen. Just make sure to read your packages before buying to confirm there are no added ingredients!
Asian Pear
Asian Pears have the same crisp texture as an apple, but the flavor of a pear. In one pear there is 1/3 of the recommended daily value of fiber. They also have vitamin C, vitamin K, and potassium. Get them while they’re crunchy!
Asian Chopped Salad Convenience
The beauty of this salad is the greens just need a rough chop – nothing pretty. The flavors and colors make it beautiful on its own. The edamame thaws in a few minutes and the dressing only take a few minutes to whisk together. For a lot of ingredients it takes very little of your precious time to prepare.

Asian Chopped Salad + Sesame Ginger Dressing
Ingredients
Seasame Ginger Dressing:
- 1/4 Cup EVOO
- 1½ Tbsp Sesame Oil
- 2 Tbsp Agave
- 1 tsp Ginger (minced)
- 1 Lime (juiced)
- 1 tsp Garlic Powder (or 1 clove fresh; minced)
- Salt
Asian Chopped Salad:
- Spinach (chopped)
- Bok Choy (chopped)
- Cabbage (red or green; chopped)
- Edamame
- Cashews
- Asian Pear (diced)
- Carrots (shredded)
- Scallions (sliced)
Instructions
Sesame Ginger Dressing:
- Mix all of the ingredients together and whisk together.
Asian Chopped Salad:
- First chop your spinach, bok choy & cabbage. Then, prep the asian pear, carrots and scallions.
- Add the greens & cabbage, and top with all the other ingredients. Finish with the dressing and toss together!
