Asian Chopped Salad + Sesame Ginger Dressing

Like peas in a pod this Asian Chopped salad is the perfect combination of nutrients and convenience.

Ingredients

Seasame Ginger Dressing:

  • 1/4 Cup EVOO
  • Tbsp Sesame Oil
  • 2 Tbsp Agave
  • 1 tsp Ginger (minced)
  • 1 Lime (juiced)
  • 1 tsp Garlic Powder (or 1 clove fresh; minced)
  • Salt

Asian Chopped Salad:

  • Spinach (chopped)
  • Bok Choy (chopped)
  • Cabbage (red or green; chopped)
  • Edamame
  • Cashews
  • Asian Pear (diced)
  • Carrots (shredded)
  • Scallions (sliced)

Instructions

Sesame Ginger Dressing:

  • Mix all of the ingredients together and whisk together.

Asian Chopped Salad:

  • First chop your spinach, bok choy & cabbage. Then, prep the asian pear, carrots and scallions.
  • Add the greens & cabbage, and top with all the other ingredients. Finish with the dressing and toss together!
