Even more for chewy pumpkin granola bars!

I made a generic version of these constantly during the initial lockdown of the 2020 pandemic. Before then I can honestly say I didn’t know you could make your own granola bars. Let alone how easy it was to make your own granola bars…

In my opinion, chewy pumpkin granola bars are the best way to enjoy a nutritious fall treat. I am all in for fall baking, but even then I get overwhelmed with an entire pan of “___” to eat up before it goes bad. Chewy pumpkin granola bars on the other hand can be enjoyed as an on-the-go breakfast, mid-morning/mid-day snack or even an evening treat.

Growing up as a dancer I carried a granola bar with me everywhere I went, just in case I got hungry. There was always an extra hiding in my dance bag. What’s funny is to this day, I hid an extra granola bar in my purse, yoga bag and car. You never know when you’re going to be in a pinch and need a snack!

Pumpkin Granola Bars

Equipment

Ingredients

Wet Ingredients

  • 1/4 Cup Nut/Seed Butter (I used pumpkin seed butter! See notes below)
  • 1/4 Cup Pumpkin Puree (this is different than pumpkin pie filling!)
  • 1/3 Cup Agave
  • 1 tsp Vanilla
  • 2 tsp Pumpkin Pie Seasoning

Dry Ingredients

  • 1 Cup Oats (whole rolled oats)
  • 1 Cup Vegan Protein Powder (I used Plantfusion Complete Protein – Plain)
  • 1/4 Cup Pumpkin Seeds
  • 1/4 Cup Hemp Hearts

Other

  • 1/2 Cup Chocolate Chips (I used enjoy life)
  • Sea Salt

Instructions

  • Preheat oven to 375°F.
  • In a large bowl add all of your wet ingredients and mix until smooth.
  • In a smaller bowl add all of your dry ingredients and miss until combined. Then add your dry ingredients to your wet ingredients and mix until everything is combined.
  • Fold in chocolate chips.
  • Line 8×8 baking pan with parchment paper and add batter – pressing into edges of pan until smooth.
  • Bake for 20 minutes until chocolate starts to melt.
  • Remove from the oven and sprinkle sea salt on top while still hot. Let sit for ~10 mins to cool.

Notes

Feel free to use whatever nut/seed butter you have or prefer. I had some Pumpkin seed butter and really wanted to amplify the pumpkin flavor!
