4 Ingredients & super easy: Lemon Pepper Broccoli Pasta
Just like anyone else, when things get chaotic in my life, I have less mental energy to plan and prepare meals. As a planner though, I am able to fall back on Plan B: those go-to meals that require 1-2 ingredients from the grocery store.
This recipe is super easy because it uses broccoli, some seasoning and a box of alternative pasta. Alternative pastas are becoming more and more abundant in our grocery stores. Here’s the short…
Alternative Pastas
Have you ever read the ingredients on the back of a pasta box? I did once and never went back.
If you take a trip down the gluten free or what is marketed as the “healthy” and “expensive” aisle in the grocery store you’ll find traditional types of pastas made from beans, grains, and even nuts! Compared to traditional pasta nutritionally, their key highlights are:
- At a minimum HALF of the carbohydrates
- FIVE times the fiber content
- Noticeably more protein
Next time you gravitate towards a box of pasta, read the ingredients. If you don’t know what it is or how to even pronounce it, do you really want to put it in your body?

Super Easy Broccoli Pasta
Equipment
- Oven
- Stove
Ingredients
- 4 Crowns Broccoli (cut into florets)
- Lemon Pepper Seasoning
- EVOO
- 1 Box Yellow Lentil Casarecce (or any other alternative pasta option!)
Instructions
- Preheat oven to 425°F
- Prep the broccoli by cutting crowns into florets
- Toss florets in a bowl with EVOO and Lemon Pepper Seasoning until well coated
- Line a baking pan with aluminum or parchment paper – spread seasoned florets evenly onto pan
- Roast for ~25 minutes until edges start to brown
- While broccoli is cooking cook the pasta according to the box!
- Mix both together and serve while hot!
