Breakfast vs. Break the Fast

I very intentionally didn’t name this Beet + Acai Smoothie recipe, “Breakfast” Beet + Acai Smoothie recipe. While smoothies are most commonly prepared for breakfast, my pro tip: just break the fast. Meaning…enjoy them for any meal of the day.

When I first went plant-based I found myself eating smoothies for dinner on those never-ending days. First, they’re super quick to prepare and enjoy on the go. When I come home starving after a long day at work, the last thing I want to do is prepare dinner for hours in the kitchen. Second, many of the ingredients can be frozen and stored at length. If I don’t have time to make a grocery store run and gather all the necessary ingredients, I have most if not all stocked for use at any given time. Lastly, they’re extremely versatile. A little bit of this, a little bit of that and BOOM you’ve got a flavor explosion packed FULL of essential nutrients. Fueling you for hours to come.

Especially with this recipe, it is packed full of vegetables…but you can’t even taste them – I PROMISE! The beets, kale and spinach blend and hide under the more prominent flavors of the berries and protein powder. Breakfast, lunch or dinner, this smoothie has got you covered.

Winter Smoothie

While I don’t crave the chilling qualities of smoothies during the winter time, I do crave the sweetness of berries. Remember those berries that you didn’t quite eat fast enough…that you threw in the freezer for a rainy day (or in this case a snow day…)? It’s about time they come out and play!

Our grocery stores have fresh berries stocked year round. If you’re with me and trying your best to stay local and seasonal, this is the perfect time to use up those frozen berries you stored away in the freezer while they were fresh. I had some frozen blackberries so I used them. But, any fruit you fancy would work interchangeably!

Vegan Protein Powder

I typically use vegan protein powder in my smoothie recipes because I enjoy the flavor it adds. That being said, it changes the consistency of any blend, adding a bit of grit to it and thickening it overall. If this isn’t your jam…no worries! My favorite protein powder alternative is almond butter. The oils also combine with the fruits for this super bold flavor combo. For the recipe below – sub 1 scoop protein powder with 1 heaping spoonful of almond butter.

Beet + Acai Smoothie

Break the fast with this vegetable loaded, fruit-forward smoothie!

Equipment

  • Blender

Ingredients

  • Large Handful Spinach (fresh or frozen)
  • Large Handful Kale (fresh or frozen)
  • 1 Medium Beet (sliced)
  • 1/2 Banana (fresh or frozen)
  • 1/2 Cup Blackberries and/or Blueberries (fresh or frozen)
  • 1 Packet Acai (frozen)
  • 1/4 Cup Plant-based Yogurt
  • 1/2 – 1 Cup Plant-based Milk (depending on your desired consistency)
  • 1 Scoop Vanilla Vegan Protein Powder
  • 1 Tbsp Flax Seeds (ground)
  • 1 Tbsp Chia Seeds
  • Dash Cinnamon

Instructions

  • Decide which ingredients you'll use frozen vs. fresh and add to your blender with the plant yogurt and milk.
  • Once smooth – add the remainder of the ingredients.
  • Depending on what consistency you like best – add in a touch more milk or a few ice cubes if needed.
  • Pour, sip and enjoy 🙂
