Vegan Apple Pancakes

It’s a tale as old as time: visit an orchard, pick an obscene amount of apples, also eat an obscene amount while picking, drink some cider, eat a donut….then get home and wonder how you’re gonna eat all the those apples before they go bad!?!

Sure, we’ve got your standard pies, crumbles & bars…but I’m thinking cakes…PANcakes.
Servings 5 cakes

Equipment

  • Blender or Food Processor

Ingredients

  • 1/2 Cup Homemade applesauce (~3 apples, skins & core removed, puréed)
  • 1 Cup Oat Flour (1 1/4 cup rolled oats in a blender until a fine powder!)
  • 2/3 Cup Light Coconut Milk (in a can)
  • 2 Tbsp Pure Maple Syrup (I’m always partial to Vermont Pure Maple)
  • 3/4 tsp Baking Powder
  • 1/2 tsp Cinnamon
  • Pinch Salt
  • 1 Apple (finely diced)
  • Neutral oil for cooking (coconut oil, grapeseed oil, something sweeter!)

Topping Ideas:

  • Walnuts
  • Pecans
  • Almond Butter
  • Pumpkin Seed Butter

Instructions

  • Mix all of the ingredients in a bowl except the apple
  • Fold in the diced apple
  • Heat a neutral oil in a skillet on medium heat
  • Pour ~1/4 Cup of batter to make the cakes
  • Cook until golden brown on each side
