Vegan Apple Pancakes
It’s a tale as old as time: visit an orchard, pick an obscene amount of apples, also eat an obscene amount while picking, drink some cider, eat a donut….then get home and wonder how you’re gonna eat all the those apples before they go bad!?!🍎🍏🍎Sure, we’ve got your standard pies, crumbles & bars…but I’m thinking cakes…PANcakes.
Equipment
- Blender or Food Processor
Ingredients
- 1/2 Cup Homemade applesauce (~3 apples, skins & core removed, puréed)
- 1 Cup Oat Flour (1 1/4 cup rolled oats in a blender until a fine powder!)
- 2/3 Cup Light Coconut Milk (in a can)
- 2 Tbsp Pure Maple Syrup (I’m always partial to Vermont Pure Maple)
- 3/4 tsp Baking Powder
- 1/2 tsp Cinnamon
- Pinch Salt
- 1 Apple (finely diced)
- Neutral oil for cooking (coconut oil, grapeseed oil, something sweeter!)
Topping Ideas:
- Walnuts
- Pecans
- Almond Butter
- Pumpkin Seed Butter
Instructions
- Mix all of the ingredients in a bowl except the apple
- Fold in the diced apple
- Heat a neutral oil in a skillet on medium heat
- Pour ~1/4 Cup of batter to make the cakes
- Cook until golden brown on each side
