It’s a tale as old as time: visit an orchard, pick an obscene amount of apples, also eat an obscene amount while picking, drink some cider, eat a donut….then get home and wonder how you’re gonna eat all the those apples before they go bad!?!🍎🍏🍎Sure, we’ve got your standard pies, crumbles & bars…but I’m thinking cakes…PANcakes.
1CupOat Flour(1 1/4 cup rolled oats in a blender until a fine powder!)
2/3CupLight Coconut Milk(in a can)
2TbspPure Maple Syrup(I’m always partial to Vermont Pure Maple)
3/4tspBaking Powder
1/2tspCinnamon
PinchSalt
1Apple(finely diced)
Neutral oil for cooking(coconut oil, grapeseed oil, something sweeter!)
Topping Ideas:
Walnuts
Pecans
Almond Butter
Pumpkin Seed Butter
Instructions
Mix all of the ingredients in a bowl except the apple
Fold in the diced apple
Heat a neutral oil in a skillet on medium heat
Pour ~1/4 Cup of batter to make the cakes
Cook until golden brown on each side
