What is tangy, herby, nutty and toasty all over?

Za’atar – a Middle Eastern spice blend of dried oregano, thyme, marjoram, sumac, cumin, coriander and toasted sesame seeds. The exact blend varies from region to region and cultural influence, but all pack a delicious flavor combo!

You can find a premade blend in most grocery stores, but you can also make your own. It’s such a good one to keep on hand to use as a marinade or topping.

Ingredients

For the cauliflower (enough for a few salads):

  • 1 Cauliflower Head  (cut into small florets)
  • 1 Large Red Onion (wedged)
  • 2 Tbsp Za'atar
  • 1/2 tsp Paprika
  • 2 Tbsp Avocado Oil
  • 2 Tbsp Lemon Juice

For the Harissa Tahini Dressing (enough for a few salads):

  • 1/3 Cup Tahini
  • 1/3 Cup Water
  • 1 Garlic Clove (minced)
  • 2 1/2 Tbsp lemon Juice
  • 1 tsp Harissa Paste
  • Salt to taste

For the salad:

  • Large Handful Arugula
  • 1/2 Cup Black Lentils (uncooked, use for a few salads)

Instructions

  • Preheat the oven to 400°F
  • Add the lentils to a sauce pan with enough water to cover & simmer for ~25 mins until tender but not mushy.
  • Toss all cauliflower ingredients in a bowl. Line baking sheet and spread evenly. Roast for ~20-25 minutes. Cauliflower should be golden brown and onions crispy!
  • Put it za'll together!
