Za’atar – a Middle Eastern spice blend of dried oregano, thyme, marjoram, sumac, cumin, coriander and toasted sesame seeds. The exact blend varies from region to region and cultural influence, but all pack a delicious flavor combo!
You can find a premade blend in most grocery stores, but you can also make your own. It’s such a good one to keep on hand to use as a marinade or topping.

Roasted Za’atar Cauliflower Salad + Harissa Tahini Dressing

Ingredients
For the cauliflower (enough for a few salads):
- 1 Cauliflower Head (cut into small florets)
- 1 Large Red Onion (wedged)
- 2 Tbsp Za'atar
- 1/2 tsp Paprika
- 2 Tbsp Avocado Oil
- 2 Tbsp Lemon Juice
For the Harissa Tahini Dressing (enough for a few salads):
- 1/3 Cup Tahini
- 1/3 Cup Water
- 1 Garlic Clove (minced)
- 2 1/2 Tbsp lemon Juice
- 1 tsp Harissa Paste
- Salt to taste
For the salad:
- Large Handful Arugula
- 1/2 Cup Black Lentils (uncooked, use for a few salads)
Instructions
- Preheat the oven to 400°F
- Add the lentils to a sauce pan with enough water to cover & simmer for ~25 mins until tender but not mushy.
- Toss all cauliflower ingredients in a bowl. Line baking sheet and spread evenly. Roast for ~20-25 minutes. Cauliflower should be golden brown and onions crispy!
- Put it za'll together!
