For the cauliflower (enough for a few salads):
1Cauliflower Head (cut into small florets)
1Large Red Onion(wedged)
2TbspZa'atar
1/2tspPaprika
2TbspAvocado Oil
2TbspLemon Juice
For the Harissa Tahini Dressing (enough for a few salads):
1/3CupTahini
1/3CupWater
1Garlic Clove(minced)
2 1/2Tbsplemon Juice
1tspHarissa Paste
Salt to taste
For the salad:
Large HandfulArugula
1/2CupBlack Lentils(uncooked, use for a few salads)
Instructions
Preheat the oven to 400°F
Add the lentils to a sauce pan with enough water to cover & simmer for ~25 mins until tender but not mushy.
Toss all cauliflower ingredients in a bowl. Line baking sheet and spread evenly. Roast for ~20-25 minutes. Cauliflower should be golden brown and onions crispy!
