Ingredients
For the slaw:
1CupQuinoa(cooked - 1/2 cup uncooked)
1/2CupCarrots(shredded)
1HeadCabbage(thinly sliced)
1Apple(my favorite is Gala!)
2TbspSun Flower Seeds
2-3Green Onions(chopped)
2-3TbspParsley(fresh, chopped)
For the dressing:
1CupLavva Yogurt(or any dairy-free yogurt you'd prefer)
1TbspApple Cider Vinegar
2TbspApple Juice
2 tspDijon Mustard
1/4tspOnion Powder
1TbspMaple Syrup
Salt & pepper
For the wraps:
8-10Swiss Chard Leaves(stems removed, blanched)
Instructions
Blanch the chard leaves: 1 minute in boiling water and after, immediately transfer to an ice bath to stop the cooking
Add 1/2 the dressing to the slaw & mix
Add a spoonful of slaw to one end of chard leaf and roll into a little burrito
