To start us off, here’s a little bit more nutritional info on our honorary stone fruits peach and plum:
Peaches:
Peaches are high in fiber, vitamins, and minerals.
Fiber: One medium-sized fruit stores about 2 grams of fiber — half of which is soluble fiber, while the other half is insoluble. Insoluble fiber aids in digestion and soluble fiber aids in healthy gut bacteria.
Vitamins: Highest in vitamin A & vitamin C.
Plums:
Plums are packed full of essential vitamins and minerals.
Fiber: Dried plums, or prunes, are known for improving constipation and osteoporosis given their high, insoluble, fiber content.
Antioxidants: Plums are rich in polyphenol antioxidants, which have positive effects on bone health and may help reduce the risk of heart disease and diabetes – twice the amount of polyphenol antioxidants as other popular fruits, such as nectarines and peaches
Avocado Toast
Avocado toast is the holy mecca of plant-based food. Sure it’s great to order for brunch, but it’s also super eat to make at home. I tend to do so when my life gets more chaotic. If you’re being mindful of your carb intake, maybe opt for a rice cake. My favorite brand is Lundberg Organic Thin Stackers: Red Rice & Quinoa
This peach & plum avocado toast in particular is one for the books. The peaches & plumes are contrasted by the citrusy spice of jalapeño and lime. Eat it as a savory breakfast, a snack or main course of lunch or dinner.
If you’re not a fan of super spicy, please don’t opt out of the jalapeño! It’s required to give the fruit that pop of flavor. Instead, dial back how much you use and if that’s not enough, remove the seeds (the oil stored inside is the hottest part of this pepper).
Peach and Plum Avocado Toast
Ingredients
Peach & Plum Salad (enough for ~4 slices):
- 1 Clove Garlic (minced)
- 1 Jalapeño (minced)
- 1 Peach (diced)
- 2 Plums (diced)
- 1/4 Red Onion (diced)
- 1/4 Cup Cilantro (finely diced)
- 1 Lime (juiced)
- ~2 dashes Salt
Avocado Toast:
- 1 Large Avocado
- 2 slices Sourdough Bread
Instructions
Peach & Plum Salad (enough for ~4 slices):
- First mince the garlic and jalapeño into a bowl.
- Then add all of the diced ingredients and cilantro.
- Top with lime juice and salt. Let sit for about 5 minutes to soak up all the flavors.
Avocado Toast:
- Toast your bread in a toaster or on the stovetop.
- Mash the avocado over both slices.
- Top with peach & plum salad.
