Radishes
Radishes are a good source of antioxidants like catechin, pyrogallol, vanillic acid, and other phenolic compounds. They also have a good amount of vitamin C, which acts as an antioxidant to protect your cells from damage.
As a late bloomer to radishes myself, eating them as is may not be the most appetizing thought.
Salsa
I use radishes frequently as salad toppings but then I got this idea to make a salsa, adding a bunch of other diced ingredients to add more color to a healthy snack.
This salsa specifically can be added as a topping or scooped with a chip of your choice (I used blue corn chips!).
It’s a winner, winner, winner. All you need is 6 ingredients and 15 minutes.
Radish Salsa
Equipment
- Food Processor (optional)
Ingredients
- 8-10 Radishes
- 1/2 Medium Red Onion
- 1 Jalepeño (optional for extra spice!)
- 1 Clove Garlic
- 1/2 Lemon
- Cilantro (to taste)
- Salt & Pepper
Instructions
- Combine all ingredients in a food processor until chunky. Transfer to a bowl and enjoy with your choice of chips or use as a meal topping!
- If you don't have a food processor: Finely dice all ingredients!
