January Recipe Round-up

January marks the start of Veganuary.

Veganuary is a non-profit organization that encourages people worldwide to try vegan for January and beyond. During last year’s campaign, more than 500,000 people took a pledge to try a vegan diet, while more than 825 new vegan products and menu options were launched in countries all over the world.

Regardless of when you’re reading this, it’s never too late to start this challenge. Thinking about it? Have questions? Contact me.

This is just a reminder that small changes lead to big impacts, especially for yourself. Picking one fruit and one vegetable to try from the seasonal list, maybe integrating them into a recipe or swapping out animal-based products, has the power to make a big impact on your own health and wellness. But only you can make that choice and lead your own charge. Just know there are so many of us here in this vegan community rooting for you!

Vegan Almond Anise Biscotti
I was gifted this amazing cookbook for Christmas (swipe to the end!). I find many recipes on Pinterest but this one came from this book. It was so fueling to enjoy my hobby reading from a book and not a screen. It’s always a special time when I pull a cookbook off the shelf…usually on a Sunday.

Winter Citrus Salad + Pomegranate Vinaigrette
It’s about that time to start packing in those extra doses of Vitamin C. As winter drags on and the subsequent sickly colds emerge on the horizon, we depend on this trusty vitamin to keep us up and running. 
This salad is PACKED full of Vitamin C using an assortment of citrus fruits from the January seasonal produce list. 
Even more, these citrus fruits are full of other health-benefiting qualities.

My favorite plant-based egg alternative is: Flax Egg
Flax eggs create an almost identical binding texture to eggs when cooking or baking. BUT what makes them my favorite is obviously the nutritional value. Think better alternative vs. functional substitute.
These Lemon Poppyseed Muffin Tops are from none other one of my favorite plant-based recipe developers. I opted for the flax eggs and coconut sugar vs. regular white!
