We made it to the end of another notable year!
In the last 365 days, I created and shared 20 salads. Lettuce was the biggest precursor to shifting to a plant-based lifestyle, and inevitably the biggest influencer of #Lettucebowandsay. If you’re curious about the whole story…read this:

I thought it was only appropriate to share a Lettuce Round-up to close out my first year of really “doing the damn thing.” Taking this trip down memory lane was a great reminder of how far I’ve come, in the big picture, in a short amount of time.
See that’s the thing about time. We never truly grasp it. So why do our lives revolve around it? The saying goes “there is never a right time.” And, as I look back on 2021 before rolling into 2022, I couldn’t agree more.
There isn’t a right time for anything so don’t waste a second of it. It ticks away in the background whether you’re paying attention or not. So as YOU gear up for 2022….pick at least one thing and just DO IT. Do the damn thing. Tomorrow is not better than today.
Each of these salads was crafted with a love for feel-good food. They are full of nutrients, flavor to fulfill an assortment of taste buds and are relatively simple to make once you get the breakdown.
My general rule of thumb while salad building: You don’t count when you eat plants. Start with your base, add your proteins depending on other meals/hunger level/exercise output, then add your toppings. If what I list is not enough, add more. There is never a salad TOO big when it is plant-based.
Starting with the first and ending with the last, I’ve listed them by season (#eatseasonal). So, whenever you need some inspiration, look no further.

Pinterest gives me most of my food inspiration and recipes. I was in the mood for a #lemonpoppyseed something and found this great salad recipe…to only sink into disappointment when I realized it was far from #plantbased
So why should that stop me (or you) from creating my own plant based version? Nothing. YOU can be plant based just as easy as you are a #meateater .

Never heard of it? It’s a game changer for however you eat and the secret ingredient…..sesame seed paste. It’s most famous for its role in hummus. But, is multitalented as a base to dressings, drizzles, desserts…you name it!
Tahini is full of healthy fats, vitamins, and minerals that check my box for a #nutritious ingredient ✅✅✅

Here is a spring inspired salad, complete with an easy-peasy, lemon yogurt dressing.

Aside from making your pee smell, did you also know asparagus can boost your mood!? This veggie is full of folate, a B vitamin that could lift your spirits and help ward off irritability. It also contains high levels of tryptophan, an amino acid that has been similarly linked to improved mood.
If that wasn’t enough, it has diuretic properties, high fiber content, antioxidants and is also full of vitamins A, C, E, K, iron, copper, calcium, and protein.
As the quintessential spring veggie, it’s about time I used it in a salad.

Fruits, especially berries, completely change the salad game for me. And, when complimented by not one but TWO flavorful herbs – it’s hard to not to do a little dance with every bite. YUMMMM is an understatement.

As you all know at this point, salads are a year round phenomenon in my kitchen. With that said however, there is just something about #summertime salads.
