Is it just me or is time FLYING??
This year has been full of some pretty big changes for me. Which means I blinked and we’re only 2 months away from 2022…
Here’s what I was able to whip up during the month of October:
Eetch
An Armenian bulgar wheat salad that is naturally plant-based with no modifications. I was first introduced to this salad years ago as a young vegetarian. A work friend brought her mom’s famous dish to a potluck and said, “You’ll love it. And it’s also vegan/vegetarian” Since becoming plant-based, it is one of my favorite party tricks. I’ve added it to charcuterie boards, used it as an app, enjoyed a few servings as an entire meal, and if it’s in my fridge, I’m also having it as a late night snack!

Power bowls helped me develop the habit, and hobby, of cooking. They are generally easy to assemble and allow for many alternatives.
They are very popular for vegan and plant-based recipe developers, chefs, etc. for the same reasons. They are referred to power bowls because of PLANT power 🙂

Ginger Sweet Potato Stew with Lentils and Kale
So in New England, it’s getting pretty chilly outside…
Which also means our taste buds are getting a bit agitated. They’re ready for warmth to contrast the cool and prepare for winter. Although I don’t want to admit it, it is just around the corner 🥶🥶
I’ve never been a huge fan of soup. When I think of a warm meal, I look for something a little more dense, and nutrient dense.
The stew was a winner. It was filling, super flavorful and left my belly warm and cozy.
