When we get pressed for time there are two options when it comes to eating:
- Order take-out
- Make your quick and easy go-to meal
This is my quick and easy go-to salad. The ingredients list is right in my back pocket – making it easy to make a quick trip to the store and throw together. I eat out plenty, but relying on prepared food because you’re short on time can be a slippery slope. I find it helpful when I resort to simple at-home meals instead because I am still dedicating time to my health. My actions are serving a bigger purpose rather than just trying to get by.
This salad falls into the summer category of seasonal produce but allows for many modifications to eat year round!
Avocado & Tomato Salad + Dijon Vinaigrette
Ingredients
For the Salad:
- 1 Large Handful Greens (spinach or spring mix)
- 1/2 Avocado (medium)
- 1 Handful Tomatoes (cherry or grape)
- 2 Tbsp Sunflower seeds
- 1/4 Cucumber (quartered)
For the Dijon Vinaigrette Dressing (enough for 3-4 salads):
- 1/4 Cup EVOO
- 2 Tbsp White wine vinegar
- 1 Tbsp Lemon juice
- 1 Tbsp Dijon mustard (coarse)
- 1 Clove Garlic (minced)
- Salt & pepper to taste!
Instructions
- Toss all of the salad ingredients in a bowl.
- Add all dressing ingredients to a container and shake.
- Pour 1/4-1/3 of the dressing, toss and enjoy!
